When dieting, often you have a very limited amount of calories available.  But you’ll sometimes get hungry and also want a different texture to eat.  Well now, you can have both!

You may have to stick to a plan and can only eat certain foods so you can get to a level of body fat that you desire.

Well now, there is a way to make mash potato from cauliflower and its only 100g per dry weight of cauliflower which is quite a lot and is just 25 calories (the size of a typical salad/veg portion).

Just so you know, a typical cauliflower is 800-1000g so you can make 8-10 lots with one cauliflower head.

Its incredibly simple too.

Ingredients:
  • 1 medium head cauliflower, trimmed and cut into small florets
  • 1 tablespoon extra-virgin olive oil (if diet allows)
  • Fine sea salt and ground black pepper, to taste
  • A few cloves of garlic to add a little zing if you wish

How do I make it?
1 – Bring a large pot of salted water to a boil. Add cauliflower and cook until very tender, about 10 minutes.

2 – Reserve 1/4 cup of the cooking liquid and then drain well and transfer cauliflower to a food processor.

3 – If your diet allows, add oil (if not you’ll allowedhave to do without or add a very minimal amount) and reserved water, 1 tablespoon at a time, and purée until smooth. (Or, mash cauliflower with a potato masher).

4 – Season with salt and pepper and serve.
