Ingredients:
- 500g boneless, skinless chicken breast, cut into 5cm pieces
- 2 bell peppers (red, green, or yellow), cut into 2.5cm pieces

- 2 zucchinis, sliced into 1.25cm rounds
- 30ml olive oil
- 15ml smoked paprika
- 15ml garlic powder
- 15ml onion powder
- 15ml dried oregano

- 6-8 wooden or metal skewers
- 200g brown rice (can be white rice of choice if you prefer)
Instructions For Chicken Skewers:
- If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
- In a large bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, dried oregano, salt, and black pepper.
- Add the chicken pieces to the bowl and toss to coat evenly with the marinade. Cover and refrigerate for at least 30 minutes or up to 2 hours.
- Preheat the grill or grill pan to medium-high heat.
- Thread the marinated chicken, bell peppers, red onion, and zucchinis onto the skewers, alternating between the ingredients.
- Place the skewers on the grill and cook for 10-12 minutes, flipping occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
- Serve the kebabs hot with a side of cooked brown rice.
Instructions for Brown Rice:
- 200g raw brown rice
- 500ml water
- Pinch of salt
- Rinse 200g of brown rice under cold water for 30 seconds in a fine mesh strainer to remove any dirt or debris.
- Add the rinsed brown rice to a medium-sized pot with 500ml of water and a pinch of salt.
- Bring the water to a boil over high heat.
- Reduce the heat to low and cover the pot with a tight-fitting lid.
- Simmer the rice for 40-45 minutes or until the water is absorbed and the rice is tender.
- Remove the pot from heat and let it sit for 5-10 minutes.
- Fluff the rice with a fork and it’s ready to serve with the chicken and vegetable kebab.
