Ingredients:

  • 500g beef sirloin steak, cut into bite-sized pieces
  • 500g potatoes, peeled and cut into small cubes
  • 1 red bell pepper, sliced into thin strips
  • 1 yellow bell pepper, sliced into thin strips
  • 1 green bell pepper, sliced into thin strips
  • 1 red onion, sliced
  • 2 cloves of garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

For the marinade:

  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 2 cloves of garlic, minced
  • Juice of 1 lemon

Instructions:

  1. In a large bowl, whisk together the ingredients for the marinade. Add the beef sirloin pieces and toss to coat. Cover and refrigerate for at least 1 hour or overnight.
  2. Preheat the oven to 200°C.
  3. In a large baking tray, toss the potatoes with 1 tbsp of olive oil and season with salt and pepper. Roast for 20-25 minutes or until golden and tender.
  4. In a large skillet or wok, heat the remaining olive oil over high heat. Add the marinated beef and stir-fry for 3-4 minutes or until browned and cooked to your liking. Transfer to a plate and set aside.
  5. In the same skillet or wok, stir-fry the garlic, red onion, and bell peppers for 2-3 minutes or until tender and slightly charred.
  6. Add the roasted potatoes and cooked beef to the skillet or wok and toss to combine. Cook for an additional 1-2 minutes to heat through.
  7. Serve hot, garnished with fresh parsley, if desired.
